ABOUT FLAX SEEDS:
Flax seeds are an excellent source of omega-3 fatty acids for vegans & also make a great egg-replacer! I keep the seeds in the fridge and I also keep a small amount of ground seeds in the freezer for quick use. Ground flax is good sprinkled lightly on salads, giving it a subtle nutty flavor. As with all seeds, use them quickly after grinding or they become rancid. Though I find the freezer method does keep ground seeds fresh for a short period. They are high in fiber & phytochemicals, including many antioxidants!
To replace eggs: 1 heaping Tbsp ground flax-seed + 3 Tbsp water = 1 egg
Whisk well, wait 2-3 minutes and then whisk again. You will see that it has become a thick eggy like substance, just like an egg! The “flax egg” works just like traditional powdered egg-replacer (such as EnerG-egg replacer, which is in the natural section in most grocery stores) in baked goods, like muffins & pancakes. Plus, it adds all those important omega-3 oils! Yay!
WHERE TO BUY:
Most stores carry small bags of flax seeds in the natural foods section. Bobs Red Mill is a popular brand many stores carry. (They also make many other wonderful items!)
